lentil soup to warm your cockles
This soup will warm the cockles of your heart in the cold blast we are having in Melbs at the moment! My friend S is the best cook around and while we were sweating it out on the treadmill yesterday she outlined her lentil soup recipe.
Here is my version which I made last night to rave reviews from Mr Aliceblue.
Red Lentil Soup
Soak a cup of red lentils for 2 or 3 hours and then rinse.
Chop up 3 carrots, 3 celery stalks, a zucchini, an onion and a clove of garlic.
Put a dash of olive oil into a large saucepan and gently fry the onions and garlic until soft. Put in the celery and let them soften up. Add 3 tsp of Patak's Madras curry paste (more if you are a thrill seeker) and stir well. Just give it a minute to release the flavours. Add the remaining vegetables and drained lentils with a can of chopped tomatoes and a large carton of low salt chicken or vegetable stock. Simmer gently for at least 45 mins. If you didn't soak the lentils for very long then simmer the soup for a bit longer.
Guaranteed to warm you up.
